Last weekend I went to visit Lydia for the weekend. I alway look forward to spending a weekend with my sister, not only is it great to catch up, but I know that I’ll be spoilt with delicious food! A few weeks before I had spoken to Lyds on the phone and she had told me all about a Middle Eastern baked feta she had sampled in work, the description had me salivating! I requested that she make it me for lunch on my arrival, it’s all I could think about on the drive there!
Lyds hadn’t a recipe for it but tried to recreate it the best she could and did a fine job.
1 block of feta cheese
zest of 1 lemon
Crusty bread to serve
- Preheat the oven to 160°
- Place the whole block of feta on a large piece of grease proof paper (you will need enough to wrap around the feta) on a tray.
- Scatter the za’atar over the feta. Then grate on the lemon zest and drizzle with olive oil.
- Wrap the grease proof paper round the feta and bake in the oven until the feta is soft, this should take about 30 minutes.
- Serve spread on crusty bread. Delicious!
