ANN’S FAMOUS BANANA AND CHOCOLATE CHIP CAKE

My lovely friend Ann who I used to work with (surrogate work mother) was famous for this cake and she has kindly let me have her recipe for it. It was everyone’s favourite in our department and when she would bring it in and send an email out headed ‘banana and chocolate loaf in the tea room’ everyone would down tools and run to get a slice before it all disappeared! Ann has been a firm friend to me recently with a patient and listening ear, so this is my tribute to you Ann and I hope I have done the cake justice!

Ingredients

200g Self Raising Flour

¼ tsp Bicarbonate of Soda

100g Butter

100g Sugar

2 Large Eggs, beaten

2 Ripe Bananas (about 225g)

100g Chocolate (Dark or Milk- your choice, I used Milk chocolate chips in mine for ease)

Method

  1. Pre-heat the oven to 180°c/Gas Mark 4/350°f.
  2. Cream together the butter and sugar until light and fluffy.
  3. Lightly beat the eggs and gradually add to the mixture.
  4. Mash the bananas and also add to the mixture.
  5. Roughly chop the chocolate/add the chocolate chips and add to the mix together with the flour and bicarbonate of soda.
  6. Put into a greased loaf tin and bake for 1 hour – 1hr 15 mins until golden and cooked through (test with a skewer).  It can also be baked in a tray bake tin, in which case, adjust the cooking times as necessary.  Best served slightly warm with a good friend and cup of tea!
