Last month I blogged about my experience at Porta tapas restaurant in Chester. One of the dishes we had was a delicious lentil and chorizo stew- it was so flavoursome and comforting! This week I tried to recreate it. I used puy lentils which I love, they have a unique flavour and are great as they hold their shape and don’t go mushy giving a lovely texture. If you can get hold of some good quality chorizo it makes all the difference too.

Ingredients | Serves 3

Glug of olive oil
1 red onion finely chopped
1 clove of garlic crushed
1tsp smoked paprika
1 green pepper finely chopped
250g puy lentils
1 tbsp sundried tomato paste
1 tin of chopped tomatoes
200g good quality chorizo sliced
2 bay leaves
A handful of fresh basil leaves

1. Heat the olive oil in a pan and then sauté the onion and garlic until they turn translucent. 

2. Add the smoked paprika, pepper and chorizo and fry until the peppers begin to soften.

3. In the meantime place the puy lentils in a pan and boil in water for about 20 minutes or until soft.

4. Add the lentils to the chorizo pan along with the sundried tomato paste, chopped tomatoes, bay leaves and basil. Stir all the ingredients together and bring to the boil then allow to simmer for 20 minutes.

5. Serve on it’s own or with some crusty bread.
