SAGE AND APRICOT NUT ROAST

I found this recipe on Deliciously Ella’s blog last Christmas and made sure I remembered to try it out this year as I am always on the look out for a decent nut roast recipe.  I was pretty impressed and it was very tasty! It made such a difference to have a nut roast where you can actually taste all the nuts in it rather than it tasting like herby, bready stuffing as some of the shop bought offerings usually do. I really enjoyed making the cranberry sauce too (adjust the sugar quantity to how sweet or sharp you like it). Ella uses some slightly more ‘selective’ ingredients in her recipe that suit her lifestyle so if like me you are not a stickler for that sort of thing, you can easily substitute flaxseeds for chia seeds or just add more flour, coconut sugar for normal sugar and buckwheat flour for wholemeal flour.

So if you are looking for a vegan/vegetarian option, why not give her recipe a try, or even if you just fancy a change from meat over the festive season, there is plenty of goodness in this recipe to keep you interested and your digestive system happy 🙂
